!Feliz Dia de Pascua!
March 2008
¡Hola!
Do you feel like Easter is a little early this year? That's because Easter is observed by the churches of the West on the first Sunday following the full moon that occurs on or following the spring equinox. Did you get that? That's why Easter can occur as early as March 22 or as late as April 25. For the occasion I've included recipes for Holy Week including Fish Stew and Capirotada.

During March we also celebrate Saint Patrick's Day and National Women's History Month, so we decided to profile famous Irish Latinas in this issue. Each of these fabulous chicas met all four requirements of being female, famous, Irish and Hispanic descent. See below for a short profile of five of our favorites.

¡Feliz Pascua a todos!
