There's always a lot going on in June between graduations, weddings and Father's Day. It's a great time to invite family and friends over for a BBQ and try out our Chipotle BBQ sauce and jicama salad recipes. And if you still haven't picked up a gift yet, see our Picante Pickz for Father's Day. >>

Now it's time to plan for your escape or vacation as its commonly called. Years ago I sat down and made a list of places I wanted to go in the world - Running of the Bulls in Pamplona, Tango in Argentina, Super Bowl, climb the Mayan pyramids and the list went on and on. Little by little I have been able to check off my list. The funny thing is my list has never gotten smaller, only longer because I am constantly intrigued by new places I want to go.

One of my favorite getaways was close to home. We went on a leisurely week long trip down the coast of California visiting wineries, the Spanish missions, Hearst Castle and quaint towns.  My friends (who sadly live elsewhere in this nation) are tired of hearing me say how great it is to live in California. This trip only confirmed it for me.

The  Mystery of the 13 Crystal Skulls

Most of you by now have trekked to the theatre to see the latest Harrison Ford movie, Indiana Jones and the Kingdom of the Crystal Skull. The fictional character and famed archaeologist is called back into action when he becomes entangled in a Soviet plot to uncover the secret behind mysterious crystal skulls. As the credits roll I don't know that anyone has been enlightened and the secret is still pretty much intact.

The 13 crystal skulls in the movie stem from an ancient Mayan legend passed down through the ages. The storyskull goes that in ancient times there were 13 skulls together in unity, the origin of which is unknown. Those who have been in the presence of the skulls tell stories of feeling an energy and seeing them emit light and moving images of ancient civilizations much like a crystal ball or digital projector. One of my parent's compadres swears that in the 1980's he experienced this with his very own eyes. (I did have to ask if there was tequila involved.) These beliefs live on in the jungles of southern Mexico among the Lacandon, the last unassimilated Mayans, many of whom still worship the skulls.

According to the legend, all 13 skulls must be found before December 21, 2012. This marks the last day of the Mayan calendar cycle which has lasted 5,126 years. On that date the earth will be knocked off its axis, unless the thirteen skulls are brought together and aligned properly. People run the gamut on their belief of what will happen when we get knocked off our axis. Some believe it will be end of the world or Doomsday (these of course are the same people who believed in Y2K) and others believe it will be the start of a New Era of Enlightment or Consciousness.

The skulls were lost in history. But, in the past 100 years one by one the skulls have re-surfaced and been found in obscure places on many continents. Many believe the skulls are being found now because the time is coming closer and closer to when they must all be reunited.

bannerSkeptical archeologists believe that the life-sized crystal skulls that are being found are actually 19th century fakes. Yet the origins and the manufacturing of the skulls remain inexplicable. World Mystery Research Center reports that some of ancient skulls have been analyzed at Hewlett-Packard in Silicon Valley, a manufacturer of printers and computer systems, which has one of the most extensive scientific and crystal research laboratories in the world.

The HP scientists, who had a chance to work with these crystal skulls were hard pressed to explain how a primitive culture could have carved crystal into such precise shapes and especially against the natural axis of the crystal without the use of sophisticated tools.

And while carbon testing has become more sophisticated and accurate in estimating the age of an artifact, you can't carbon-date an item that has no carbon in it.

Today, not all of the skulls have been found nor have they been reunited. So, the mystery continues...

Jicama, Shrimp
& Apricot Salad

INGREDIENTS:

1 lb large cooked shrimp
1/4 cup seasoned rice vinegar
1/2 teaspoon minced garlic
1/2 teaspoon minced peeled fresh ginger
2 tablespoons vegetable oil
2 Tbls lime juice
1 lb jicama, peeled and cut into 1/8-inch-thick matchsticks
3/4 lb firm-ripe apricots (4 large), cut into 1/4-inch-thick wedges
1/4 cup chopped fresh cilantro
1/4 cup slivered almonds

DIRECTIONS:

Whisk together vinegar, garlic, ginger, and oil, then add shrimp and remaining ingredients and toss to combine well. Season salad with salt and pepper.

Chipotle BBQ Sauce

A lil' sweet and spicy sauce
for your favorite Papi on Father's Day! Slather this on top of Chicken or Ribs (Before or after grilling however you do it! I don't even want to touch that subject) for a great twist on a traditional BBQ sauce.


INGREDIENTS

1 7oz can chipotle in adobo
1 cup boiling water
1 onion, chopped
1/2 cup brown sugar
1/2 cup cider vinegar
1/2 cup water
1 12 ounce can tomato paste
4 cloves garlic, minced
2 tablespoons butter
1 tablespoon soy sauce
1 1/2 teaspoons cumin
1 1/2 teaspoons thyme
1 1/2 teaspoons dry mustard
1 teaspoon Tobasco sauce


DIRECTIONS

 Melt butter in a saucepan and add onion, garlic, cumin and thyme. Sauté until the onion is soft and translucent.
Add
finely chop chipotle chilies and remaining ingredients. Bring to a boil. Reduce heat, cover and simmer for 30 minutes.
